    If I made burgers like that I would want them all the time too. Looks great! That spatula looks nice for using in the egg at regular level. Nice curve. Although it would also work good for those burger squisher cooks. More leverage ha ha!

    On her blog she mentions that she buys her meat from a local market that grinds the chcuk themselves and it is so good she doesn't add anything to the burger, just seasons the outside with slat and pepper and something else...I forget.

    If you haven't yet tried fish sauce in your burgers--do it! Try 1 tablespoon per pound. The raw burgers smell a little like feet, or fish, or fish feet, but when cooked no one would detect fish sauce as your secret ingredient. They'll just want seconds.

    From a previous post, I remember that she is a big fan of fish sauce, so I bet there is a splash or two in those amazing looking burgers !!!   You can almost see the umami in the plated burger.

    Thanks Kristi for the post. Yesterday after work went to the meat market to get some hamburger. Got there and saw they had a special on ribs, and some shrimp. Got all excited about some cooks for the weekend and forgot to buy the Gruyere. Got home and started things going before I realized I was short of the cheese. So I used Blu Cheese on mine and cedar on my wife's. The burgers tasted great. Thanks again. There will be follow up cooks of this sort for sure. Have a good weekend.

  • Hey guys! Sorry for the late reply -- I'm in Austin eating like a mad woman!

    The spatula is from pampered chef. It was a gift about 10 years ago- love the shape and size.

    Fish sauce is a great idea! Love that stuff... I'm gonna give it a try. :)

    Ok, time for a breakfast taco to soak up last night's festivities. ;)
