How Thick To Cut Ribeyes

1.5 is a good cut size, i usually tell them a size a little bigger because they seem to undercut the size

why not buy the whole rib eye and trim it yourself? you'll get the size you want, and maybe save a buck a pound.
you can age it too, but that's another discussion.
if bone-in, you could just cut between the bones. after cooking, butterfly it for two people.
or take the ribs off yourself and cut the steaks to the exact size you prefer.

At $7.09/ lb, they aren't charging for the cut. I typically see ribeye for $12-14/ lb
I want to taste their meat first but the plan is to get some roasts also.

choice is $16.25 per lb
That is at one of the better meat markets in Chicago. So i would say $7.09 per lb is amazing, assuming the quality is there.

$16 and $27? Costco's price for choice is ~7-9/# and prime is $12-14/# but may not be as quality as a market in Chicago... depends if that market meat price is aged or not....
That $27 is about the price I can get dry aged prime meat for at whole foods

But to your question... depends on the individual... I say no less than 1.5... I personally like cowboy cut super thick bone in ribeyes... like 2-2.5" thick.... :-)

I couldn't even buy it wholesale for that when I had a shop. I'd be a little wary of 3.83 Ribeye unless I knew where it came from and could see it.

I like them 1.5 to 2 inches thick and usually buy the whole piece and cut them myself. There are a few markets around here that have them for 6.99 to 8.99 per pound. Costco is one of them.

That is Canada AA or better so Select? or better. It's a sale price on whole rib roasts that has been on for a couple of weeks now. I cut ten steaks from a roast on the weekend, plus the bones and the spinallis from the cap. Cap off was $3.99 and boneless steaks were $5.99

30 months or younger is ok it actually makes for more tender beef. It's the older cows that McD's and Taco Bell buy that are dicey. I was a Certified Angus Beef retailer for a while and they were all 30 months and under too. Our best beef is 30 months and younger here.Keepin' It Weird in The ATX FBTX

What do i want to look for? The butcher is 20 minutes away and I can look but not knowing what to look for....
I always went to the local grocery store meat dept for steaks but I want to do better.

I just look for marbling and color. I actually prefer them darker red (that means they have some age on them) . If it looks anything like this pic- buy it. This was prime and choice will normally have a little less marbling (but not always) but this is a good guide to use when looking for a klee ribeye.
