Dome temp vs. grate temp

Happy St. Patrick's Day !

I've got 3 8# BB's on as of 6am on a large.The et-732 reads 190* and dome almost 300*. Wich one should I use? Looking to pull these at about 5pm .  I am using the PS and a water pan which has the seasoning/ cherry wine marinade in it.

Any hints?  This is the trial run with BB's.

    That is a larger temp difference than normal. My guess is because the grate probe is near a bunch of cold meat. Was your dome temp calibrated and checked?

    Normally I see the grate temp only 20-40 lower than dome.

    Time to start trouble shooting because something cannot be right.  Start with your calibration and where the probe is placed.  Like stated above dome is usually 30 higher.

    I would add to the above the question: Are you using a platesetter. They soak up a lot of heat before they get as warm as the dome. Eventually a platesetter will be quite hot, but for an hour or so, it is a heat sink.

    Well I finshed @ 6PM. For what ever reason the last 3 hours the meat temp would not go above 172*. I turboed it @400* the last hour. It came out fine.Total of 12 hours.Dome temp was 300* the entire time.Grate temp was 200*..That just seems to long at that temp.

    Sorry no pics. To much to do today including have to mow the lawn. Thats to early here in Michigan

    That's pretty typical.  That's where the stall takes place.

    That just seems to long at that temp. 

    That is too long.  I'd pull your thermometer out and check it in boiling water - see if it's 212. 

    ...on the other hand, if the grid temp was really 200, that might be about the right amount of time at the low temp.  I'd test them both.
