stubborn little picnic

So I have a picnic on since 7:00 AM this morning (ET), it was at 203, jumped back to 201. I have a steel probe I can poke it from the top. Tender, but not like butter. What should i do, let it ride, or pull it?

The picnic still has the skin on it I believe. Maybe that's why it seems tough? It may also just have a good thick bark on it. You cooked it to temp. I say pull it, wrap and rest for at least 30 mins. Then pull it apart.XL BGE - Large BGE - Small BGE - Traeger Lil' Tex Elite - Weber Smokey Joe

what size weight was it. just thinking about time cooking and size 1.5 to 2 hrs. per pound

8lbs, pulled at 207 and resting. When I hit it with the thermopen I was getting around 205 everywhewre, but some places were less

Anything over 195 is good for pulling. 185 for slicing. Internal temp is the only thing that counts. Time is only an approximation.
