Caring for the BGE and Smoking

I want to smoke a turkey for thanksgiving and it's my first time doing it.  It's got to be pretty big, maybe about 25lbs. How long will that take and what should I do?

 

Also, I opened my EGG today and it had mold all over the grate and even in some of the felt areas.  I quickly cleaned it up and fired up the EGG to burn off anything else.  I let it heat up as high as it would go to be sure it got everything. I never had that happen to me within any other grill.  I think it was because I left the ceramic cover off.  Did I do the right thing by burning everything off?
