Dr BBQ Sausage Question

I don't know if Ray will see this or not but I will throw it out here anyway.
I have the Big Time BBQ Cookbook and in it he talks about wrapping his home made sausage in plastic wrap and then putting it in the grill still wrapped. Plastic Wrap? Won't it melt? He cooks these like you would a fatty.

I have used corn husks. Saw it on an episode of diners, drive in, and dives. They come out great and don't stick at all.

As long as you're cooking at a low temp indirect the plastic won't melt. It's been a while since I wrote that but I think you just leave it wrapped until it firms up and has a nice shape. This was before the fatty was invented. (Or maybe it was the original fatty)

Ray,Thank you so much for your reply. I have done the brat and it was delicious but was afraid to use the plastic wrap. I will go for it and use the wrap like you say. This sure beats washing the casings and then standing there stuffing them.What do you think about putting a little sour kraut right in the sausage wrap? Do you think it will hold together? I would serve it on caraway rye bread, Boetje's mustard, and a pale ale.Seriously thank you for all of your help. This book advanced my bbq by infinity.

No I don't think the kraut would work out on the outside. It'll just fall off when you unwrap it. Enjoy!

If you are worried about the plastic couldn't' you use something like parchment paper instead? You can bake with it so it obviously withstands temps well into the 300s. At least that would elevate your concern. Good luck with it.

I'm telling you corn husks work great and they even let smoke get through to add flavor.

I am sure that the corn husks would work great. What I like about this is it is just so simple. Takes about 5 min to get ready for the grill. I just slice the loaf and serve. I will for sure keep this in mind.
