Skirt steak w/ avocado salad
climbing egg
Posts: 74
Cooked a skirt steak with a nice summer salad tonight. Also had some grilled potatoes with goat cheese to go with it. I forgot to take my camera outside and didn't want to leave the steaks unattended very long. So here's the before and after......

Thanks. It's a sauce made up of balsamic vinegar, evoo, garilc, dijon, and basil.

Man that looks really good. I love skirt steak.
This is the greatest signature EVAR! -
I love poatoes, and those do look good, but I am a homemade tortilla guy with this kind of meal. Add a little salsa verde and I am a happy man."Pork so tender you can pull it with a spoon." ~Spoon

@LostinMiami- The third pic of the raws is the only one i have, sorry! Its really easy, 2 grilled ears of corn, a large avocodo(I used a medium and wished I had more), can of black beans rinsed and drained, about 2 tbsp of chopped cilantro, and a squeeze of lime.
I'm with ya @Spoon- we decided we would be having fajitas the next time..... -

The potatoes are in Bobby Flays "Grill It" cookbook.
Put them in cold salted water and bring to a boil. Simmer for about 15 minutes. Take them out of the water and let cool long enough to handle them. Slice them up, brush with evoo, s&p, and grill 2 minutes on each side. Take off and layer potato, goat cheese, potato, goat cheese, potato. Place stacks on grill for about a minute (to slightly melt cheese). Remove and top with vinaigrette.
Vinaigrette:
Blend together; 1/4 cup balsamic vinegar, 1 clove garlic, 2 teaspoons Dijon, 1/4 cup basil leaves, 1/2 cup evoo
Enjoy!!
