the only newenglander that eats chili without beans is sundown :laugh: :laugh: his realmanchili recipe is awesome though/with beans ill eat it with or without but i cant serve it here to anyone. cin chili is top notch if you can get it, the cinchili with beans is not sold here thoughfukahwee maineyou can lead a fish to water but you can not make him drink it

No beans. And no chicken chili or vegetarian chile, either, for that matter. The original Chili Queens of San Antonio didn't use beans and that's good enough for me.

The rules for the Chili Appreciation Society International, Inc. cookoffs state:
2. NO FILLERS IN CHILI - Beans, macaroni, rice, hominy, or other similar ingredients are not permitted.
I'm inclined to agree. -
i dont know, i like lots of kinds of chile, really like chile verde. white lobster chili with creme fraiche is darn good

I think the only other thing dis-allowed are pre-made "just add meat" seasoning packets. The winning recipes often have lots of dried spices and chilis, some herbs, but fresh are not discouraged. I think one winner used a small amount of pork get some rendered fat to sauté onions. I believe several recipes re-hydrated dried chiles, but just retained the pulp.

Personal taste is yes, beans. But, please, no kidney beans! Just dried (not canned) pinto beans soaked overnight.

I usually will put a cup of pinto beans on the side in case one of the "great unwashed" want to include it. In that case, it's called "chili with beans", not chili.
I haven't read all of the posts, but if it hasn't been said, an old Texas mantra is: "Anybody that puts beans in chili, don't know beans about chili" -

I am a heretic, :ohmy: with beans and with out out. The folks here in Indiana put pasta in their :huh: chili. The freaked me out at first. I was born and raised in southwest VA and currently live in Indiana.

If it goes into a bowl and is served with corn bread, as it should be, it must have beans.
If it is used as a condiment on a hot dog or burger then no beans.
