We spent the 4th in Dallas with the kids. We had a chance to scope out Hornhonk's hotdog supplier and while there at Hirsch's picked up some stuff for the egg. Went over to visit Hornhonk at Elliotts tasted those non wagu hot dogs (pretty darn good).
The Spices Hornhonk donated C&S to sent to Chris in Afganistan
On the way home stopped at CM and found this gem
Sprinkled with course KSalt RT 40 mins, brushed off salt and seasoned with pepper
on at 550ish turned to get grill marks
flipped and seasoned with garlic powder, pepper and lemon pepper. Added second grate and closed vent temp 315ish and added portabella
"bella" pizza, sliced tomatoes, italian season and smoked gouda goat cheese
pulled at 135 (about 12 min cook time)
ready
Back home tonight and fish sounded good and quick
Fish on the mini
Pacific Cod from Costco (freezer section) Dizzy Tsunami, lemon pepper, lemon zest
All good eats

WOW- what a meal you cooked.....Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers. -

I lucked into it. It was a 3 standing rib roast and they cut it for me (marked choice ? and priced at 13.95/lb). The butchers at CM (on 290) are very accommodating. I have not purchased a bad cut of meat from them.

Damn that looks great. I have already be thinking about a second egg to take on vacations with me. The large is a little to big to haul around. Looks like the small might do the trick I am debating between the small and medium..Thanks great looking food..

Don't over look the mini.
I started it tonight when I got in. Prep'd the fish and was cooking in less than 1/2 hour. We ate at about 8pm and I just went out to clean the grate and temp is all the way down. Outside is cool enough to handle.
We purchased the mini because we like to meet SIL and BIL halfway between Austin and CC and have a picnic. The grates in the public parks are the pits (pun intended)...no telling what was last put on there either.
Also the mini is very temp responsive, when you shut it down temp drops pretty fast.Large, small and mini now Egging in Rowlett Tx -

I've boughf pizza stones from amazon & from stores like Williams Sonoma, the only thing different is the thickness I like my stones thicker
