Quick Butt Question

Cooking a smallish 4lb pork butt today. Dome to 250deg and wait till butt hits 195 and pull off grill.
Question - one side of my butt is fat. Should I trim before I do mustard/rub?
If I leave fat should I cook with fat side down entire time?

I don't trim the fat side. Leave the fat side down. Be sure to have a drip pan under it.

Just shows ya to each his own. I like LOTS of bark, so when it comes to Butts, I always trim the fatcap...you won't dry out a butt if you cook it the way you're planning....so much fat inside the butt. Either way, enjoy!!

I like to cook with the fat on top, that way it bastes the meat while cooking.
