Cowboy State Finally Sees Copper River Salmon

If you follow this wild salmon, you know the season opened about 3 weeks ago. The west coast most likely had it in a few days...... It takes longer for it to show up out yonder. I cut about 6" off the tail end of this side, and it's curing this evening for smoking on Monday. The rumor from Alaska is that this year will be the 5th largest harvest ever. Bring it on!!

I got it straight from Safeway, shipping would be pretty expensive. This is the tail section I just rinsed off after 6 hours in the cure. It's raw, but looks good enough to eat right now.

Let's me explain some'en to ya. I love sushi and as good as that cooked one looks that tail looks even better! It's 2:52 AM and I could have it after my Fruit Loops! :laugh: I don't see any weeping on the fish in the cooked fish. Does that mean you pulled it before it did? :woohoo:
Hope things are better for you. Been thinking about ya. Auron is really a handfull right now. Just turned one and like a teenage boy really challenging me for his position but I like a tough male. :pinch: Remember we humans have opposing thumbs! :laugh:
