Tuna or Swordfish are somewhat "leaner" than mahi although they cook much faster... As you know the tuna is normally served pinkish inside..

For tuna I like it just barely seared and completely cool inside. Sliced thin served with very thinly slices green onion and ponzu sauce. Yummy. Sesame seeds would be a good addition to a sear.
