Paul: Try the Asian, or other ethnic markets. Do you have any "Roxies" near by? (I've been out of N.E. a while now...not even sure if Roxies still exists).

What is Roxies and where was it located when you were in Massachusetts? I don't know if there are any Asian markets in Worcester. I know there are plenty in Boston and I travel there every day. I was hoping to find a full service butcher closer to home.

Ya know, I'm about 15 miles from the Mass border and the only time I ever go there is when I'm on my bike. Really have to get up to Boston sometime.

A T ride isn't out of the question. Just an interruption in the workday I'd rather avoid. It would be easier if I was on thee way home (driving). I'm out in South Boston on the Silver Line.
I know there are a lot of Asian markets but quite honestly I've never been in one. I guess not knowing how often they turn the chicken (or ducks)hanging in the windows kind of bothers me. I don't know if the product is quality product or something they would pass off on an unsuspecting buyer. I would just prefer someone closer to home. -
Paul: I totally understand your concern, but I can also assure you, if they are operating in the State of Mass, it doesn't matter WHAT ethnicity of the market. They are ALL held to the same standards. I would guess that if you were to stand by an Asian Market window, those ducks and chickens would be replaced twice in an hour. I truly understand the concern, and respect it, though you ought not worry.

Blood farm in groton has farm fresh bellies. You should also consider asking your butcher. I get mine locally by just putting in an order. Couple days later and he has a carton of four or so. I buy two at a timeed egli avea del cul fatto trombetta -Dante

FWIW- I would recommend checking out the Butcher & The Baker (Butcher shop) in Reading on Haven St. I've also heard it referred to as the "Olde Redding Butcher Shop" That's where I got my Standing Rib Roast for Easter.

market basket has a central distribution chain. they can get just about anything fairly quickly, because they carry a lot of ethnic foods at many of their stores.
ask the manager of the meat department (not really a 'butcher', true), and he'll call in the order for you. he'll get a case (large cardboard carton with four or five bone-in bellies).
tell him you want boneless pork bellies, whole, for making bacon. they'll be about 5 to 7 pounds. he will order the bone in, but will cut off the spare ribs for you if you are clear that you want bonelss, and you want them as thick as possible.
these aren't eco-friendly-free-range-green-granola bellies, they'll be factory, but they are damn good, certainly better than buying injected brined baconed egli avea del cul fatto trombetta -Dante -

Look for a smokehouse or meat cutter in your area. I found them here in Podunk, PA.
