The pork was very good even though I let it get to 155. The cooking temp was 315 and time about 1hr45. I not a BBQ sauce fan, but this sauce was pretty darn good..well balanced sweet to hot

Nice cook Joan - looks mightyfine
Not a huge sauce user either - just ribs, wings and thighs and not always on them. I have used a couple other Sucklebusters products - my favorite is Hoochie Mama rub. Great on any poultry. -

Looks great!! Just wondering why not put the bacon right after the sear? When we wrap the loin roasts the bacon comes out the right amount of crispy being on there for the whole cook. Were you happy with how crispy the bacon got?

Real good looking Joan. What is in the bowl?Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given another Mini to add to the herd.

Actually I was using the bacon more for the fat. This cut is very lean, no fat what so ever. That is why the temp got away from me I was trying to crisp up the bacon a little more. The next one I will slightly cook the bacon while searing the roastLarge, small and mini now Egging in Rowlett Tx -

1 tsp of coriander seeds
1 tsp of green peppercorns
1 tsp celery seed
1 tsp piquillo pepper powder
2 bay leafs
1/2 lime juice and zest

That's the cut of pork I use for buckboard bacon, too.
Can get it in larger packer bag with 6-7 pieces pretty cheap at local IGA and occasionally Sam's. Great flavor, that cut

To make squash boats cut the squash in half scoop out about a spoonful of the seeds and dot with butter and your favorite seasonings. ( I used Dizzy Dust, lemon pepper, salt and pepper).Large, small and mini now Egging in Rowlett Tx
