Well its not easy, but priorities have to be made. Family, God, Country, Egging. Luckily its the one hobby of mine that everyone can enjoy so my wife doesn't mind me spending time cooking dinner for the family.

Nope, that was what I bought. I think most Bjs carry the same packaged meats. Suffice it to say that I could have put that marinade on raw hide and it would have tasted good.

The pork loin has great flavor on its own as well. I've made chops out of a whole loin from BJs before and they always turn out nice.

Thanks Beli, the marinade is outstanding. I couldn't find guajillo chili powder in DC so I went with a mix of fresh chilis that I roasted. The flavor that came through from them was out of this world. Complimented your original recipe nicely.

    Thanks again,

I agree that it is a great recipe! I've cooked it a few times but have yet to take pictures....
Where are you located? I can get guajillos near Columbia but honestly, your fresh roasted ones look better than my ground up pre-dried ones ;)

I don't have a link to the orginal post, but the following is his recipe. I generally email myself recipes off the forum that look interesting and I grabbed his months ago.

    Here you go:

Posted by: Beli on 2010/12/12 15:49:19

    Ingredients
    1 white onion, halved
    1/2 cup fresh orange juice
    1/4 cup distilled white vinegar
    1/4 cup guajillo chile powder
    3 garlic cloves, halved
    2 teaspoons coarse kosher salt
1 teaspoon dried oregano (preferably Mexican)
    1 teaspoon ground cumin
1 large or 2 small chipotle chiles and 1 to 2 teaspoons adobo from canned chipotle chiles in adobo
    1 2 1/2-to 3-pound boneless pork loin, cut into 1/2-inch slices
    1/4 cup chopped fresh cilantro
    Corn tortillas

    Preparation
Coarsely chop 1 onion half. Place chopped onion in blender. Add orange juice and next 7 ingredients; puree marinade until smooth. Place pork in large resealable plastic bag. Add marinade and seal bag, releasing excess air. Turn to coat. Chill at least 4 hours.

Fired the Mini at 380. Grilled pork with some marinade until slightly charred and cooked through, 2 to 4 minutes per side. Chopped the pork & Mixed.

Meanwhile, finely chopped the remaining onion half, add cilantro & mixed. Grilled tortillas until warm and slightly charred, about 10 seconds per side. Ready for your tacos.

    Some tacos with refried beans

Its for about 3 pounds of pork.

    Enjoy!
