Pulled one smaller butt already about two hours ago and the 10 pounder is still going. Resting for a while before dinner so I wanted to take it all the way to 200. Dang thing got to 195, then dropped back two degrees to 193 and has been stuck there for over an hour. Pretty typical of a plateau, but isn't it a little late in the cook to be hitting that?

I even kicked it up to 275 to try and get it moving again, no luck.

Run it up to 350* F.
