When I cook these big steaks I usually throw in a little oak after the initial sear, I thought Id try some mesquite this time, It was a little to bitter for my taste.

Sure Clay, Mix 1/2 c mayo,3 cloves of garlic,2 Tbs of rice vinegar, 2Tbs fresh dill, salt and pepper. Add 3/4 of this to 10oz of mushrooms, 1 red pepper,and 1 red onion,cook till tender then add the remaining dressing.

Hey Tim, your steak looks awesome! I am one that loves mesquite, it does have a unique flavor. I find that it mixes well with other smoke woods, you might try adding a little to your usual oak the next time. Also, if you ever have the opportunity to try it mesquite lump charcoal is milder than the smoke wood and has great flavor.
