Mexican potluck on Tuesday. Did some diggin' around and found this gem by Dave Katz

Followed it pretty closely. Added some Guajillo, Aleppo (use this in just about everything), and a little ground celery seed.

Did you add any seasoning after shredding? I find the earthy flavours of achiote dull a bit after the long cooking? -

Cityplace, cook is still in progress. I will take a pic and post later when I shred. Recipe says to reserve the marinade in fridge. While butt is resting, add 1/2C OJ to reserved marinade and bring to a boil for a min. I will probably add some herbs/chile the day of, haven't decided yet?BrandonQuad Cities

What kind of setup did you use to collect drippings? Mine always become lava rocks in a tray.
