hi all! hope all is well!
i'm looking for ideas of something special to do with pork and some beautiful califorina medjool dates.
the dates can be used in any way and preferrably more than one way.

what about a "main course" idea?
i was thinking some type of either marinade or sauce or both with some pounded pork tenderloin. problem is, i'm shite on sauces and marinades. -

Off the top of my head I would think tenderloins splayed and pounded together with roasted garlic.
You could use goat cheese, roasted peppers, cous cous, zataar mix and olives for starters

Appetizers, Dates W/Manchego Cheese and Pepper Bacon, Roudy
INGREDIENTS:
24 Jumbo Medjool Dates
12 Slices Thick cut Pepper Bacon
Manchego Cheese (can substitute with Chorizo Sausage)
PROCEDURE:
BGE Setup:
1 Set BGE up direct with raised grid. Stabilize the temperature at 375.-425.. Use cherry, pecan, or other smoking woods if you prefer a little more smoky flavor.
Preparation:
1 Pit the dates by making a small slice along one side. Insert a cube of manchego cheese the size of the cavity in the date. Wrap with . slice of the best quality pepper bacon you can find. Place on bamboo skewer. I typically put three dates on a six inch skewer or two dates on a 3 inch skewer. Cook until the bacon is crisp (about 15 minutes). Turn the dates a few times during the cooking process.

Take a batch of dates and remove the pit, through a small slit and then pipe in some creamy cream cheese and wrap in bacon. cook those bad boys up indirect until the bacon is done and POW! sooo good -
the dates i got are choice medjool dates from hadley fruit orchards in california. i'm cooking the pork and dates as part of a throw down so to speak, so i'm going to have to step up my game.

If you cook good pork you can get lot's of dates!

Stuff with almond, wrap in bacon, season with favorite rub and roast over drip pan.
