Alexis picked up a 10 lb bag of leg quarters so last night I made "roadside chicken". It was good and disappeared.
I was going to vacuum seal the rest today but it seemed easier to go ahead and grill them!
I did them on a raised grid by putting an inverted spider rig under my cast iron grate. Egg was running at 350f with some cherry wood chips thrown in. Cooked them to 180f internal temp in the thighs which took right at 45 minutes.
For the ones we ate tonight, I brushed some Big Bob Gibson BBQ Sauce on them. I used the recipe from Big Bob Gibson's BBQ Book (which is different than the one in Peace, Love, and BBQ). Excellent.
The leftovers are going to be chicken salad for lunches. What's your favorite chicken salad recipe?

Lookin GOOD! My wife makes the BEST chicken salad I ever tasted.I grill/smoke split breasts and she makes it outta that.Just chicken,mayo(Duke's),s&p,celery and LOTS of hardboiled egg.

Same chickie salad as Hoss described but with one or two sweet pickles chopped up. -
That sounds kind of what I like. I don't like a lot of grapes, walnuts, apples, etc. But I'm kind of thinking something different would be good.Knoxville, TN

Chris, like Frank, I use sweet pickle relish, just a teeny bit! Those legs look picture perfect.Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

That looks like a Claycort/Craycort.They even have sections that are griddles.Cool grid!Spring Chicken has one too.When my CI grid finally bites the dust,I'm gettin one.

Nothing better than chicken salad - and from the looks of things, yours is going to be fantastic. I don't have a set recipe for mine - I've tried over the years to copy the chicken salad from "Darryl's" (restaurant chain - I think they are all closed now). Minced onions and celery, coarse ground black pepper, sweet pickle relish, and mayo. I think it tastes best if you prepare while the chicken is warm....I dice the chicken and throw on the onions, celery, pepper, and relish - let it rest until the chicken is cooled (I put mine in the fridge for the cool down). Then add mayo (and once in a while a little mustard too). And I always toast my bread!

That looks good. I looked up the link to roadside chicken. Hope you don't mind, but I printed it out and am gonna try it.
