Reading the BBQ blog referenced in another post, I came across German Speck, which is bacon that is cured, smoked, and then smoked again. Looks like bacon uncooked, but eaten in its second-smoked state. Supposedly like bacon-squared in flavor....
Is anyone familiar with this? Searched site for speck but nothing was returned. Working up to my first effort at making bacon. With the success folks are posting, it looks too good not to try!!!!

there is a German master sausage maker/ butcher shop near here and they sell
Double smoked bacon i will ask if this is 'speck' when i stop on saturday , buy some and post a pic

Not that particular kind, but Speck in German just means bacon. I have had plenty of Speck all over Germany as part of breakfast.

speck is delicious!! I have a hard time finding it here, but there is a place that serves it as part of their charcuterie plate. Hmmmmmm.... tasty.... prosciutto is a very close second.Large and Small BGE * www.quelfood.com
