...hot-smoking it to about 145 or so. Apple wood, some pecan, and part of a 75-year old maple chair from the basement of the Town Hall. Still has some varnish on it. Varnish is natural (least it was back then), I'm hoping it'll lend it some color.

That is simply beautiful.

Shellac is natural as well but it smells like crap when it burns. Something like burnt hair but worse. One way to ID an old coating is to burn it. I'd take the time to sand or plane off any coatings.

you should see the color on this thing. my god. nice sweet smoke, the flavor is fantastic (yes, i tried it).
went about 11-12 hours, never hit 140.

i have the big ziploc it cured in... i suppose that it won't make the surface (now smoked) wet and dewy if i let it cool before wrappin it.
think i will allow it to cool to room temp, then into the fridge overnight to chill, and then into the ziploc. that way, the heat won't make it sweat if i wrap it now.
