Is there a particular recipe you use for your frittata or is it a whatever is available I use recipe?? Any tips would be helpful...thanks :)

    It normally is something that was left over and then added to. Always have a plan but sometimes the plan comes from what is in the fridge. :)

    Here is one that I used crawfish, potatoes, onion, and corn left over from a crawfish boil. Added eggs, peppers, and cheese (I normally put a few crawfish tails aside just for a weekend fritata)

    Started with sausage for this one

    Another one started with left overs from a crawfish boil

    Cheese, onions, peppers, tomatoes

    Little more cheese on the top when the eggs were just about cooked

    BTW - Please thank your lovely bride for sharing her pickled jalapeno recipe. Bringing some to Salado this weekend for a treat over philly cheese.
