Cooking with duck fat

I bought 4 more duck breasts today (2 to cure & smoke & 2 to make prosciutto) out of. While I was at the market I noticed they had duck fat for sale for $1.29 a pound. I bought a pound and will take it home and freeze small chunks of it.

My first dish will probably be duck fat fries...any other suggestions for using the duck fat??? and yes confit is on the horizon but lots going on the next few weeks so that will have to wait.... :lol::);)
