Cooking with duck fat

I bought 4 more duck breasts today (2 to cure & smoke & 2 to make prosciutto) out of. While I was at the market I noticed they had duck fat for sale for $1.29 a pound. I bought a pound and will take it home and freeze small chunks of it.
My first dish will probably be duck fat fries...any other suggestions for using the duck fat??? and yes confit is on the horizon but lots going on the next few weeks so that will have to wait....

Rub in on your spatchcock chicken, or on turkey breast. I think Mad Max used it on his turkey for Thanksgiving and said it was awesome!Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

you are right faith, i rubbed it all under the skin of my mad max turkey...don't know how much flavor it actuallly added to the turkey meat, but the drippings (combined duck fat, turkey fat, butter and wine) made for the best batch of gravy we have ever made!!! i'm sure the same would be true if you rubbed some on a roaster chicken, and then used those drippings to make some great chicken gravy!!

Instead of using oil for a gumbo roux, I used duck fat the last time I made a gumbo. The gumbo was duck, chicken, and andoille and is mightyfine. My traveling companion took a container out of the freezer yesterday - gumbo tonight.

Kim: I love to use it for crashed taters, roasted potato wedges, roasted cauliflower, etc. Use it in your skillet/pan in lieu of the oil or butter. Your options are pretty endless! Enjoy!!

I use chicken fat all the time, and duck fat when I can get it. Mashed potatoes, fried eggs, bread stuffing, in place of butter.

I saw a guy on Food Network (can't remember the show...it might have been Triple-D) that cooked small blocks of pork belly in it for several hours in an oven before finally flash-frying them in a deep fryer for a few minutes, then served them with a sauce as an appetizer.
Wow, did that ever look good. Ever try anything like that, LC?
