Making Pizza? MAKE A CHART!

One thing about the Pizza Lab below, and every other time I've made pizza...I always forget at least one of the ingredients I meant to put on. And making several pizzas? EEEEEEK!

I'm going to make a vertical chart with the dough at the bottom and go up ingredient by ingredient to the top for each kind I want to make. Maybe in pictures, maybe in words.

For example, Al Forno in Providence, Rhode Island makes knockout Pizza Margherita and brushes chili oil on the dough before the tomatoes and the cheese. Who can remember? Same trouble with lightly drizzling olive oil in a spiral on top of the finished pie before baking, per Tony Gemignani. Forgot that one till the very last pie.

Etc. etc. etc.

Gray hair hides a shrinking brain.

    Hahaha - at least u didn't forget the dough!!

    I hate it when I go to the kitchen for food and all I find are ingredients!
