slinging bacon....
so far i've sliced and vac-bagged pancetta, loin bacon, and sweet maple bacon. i have some savory bacon on deck, and three duck prosciutto breasts after that.
giving the stuff as christmas gifts. nothing says "merry christmas" like searing abdominal cramps and nausea.
this was what it looked like a few weeks ago (November 18th) in the fridge

i cooked the trimmings (from squaring up the ends) the other day to top some soup. wife is making clam chowder now with some trimmings from today.
the stuff is great. been eating it raw. the much drier end cuts are my favorite frankly. almost like prosciutto.ed egli avea del cul fatto trombetta -Dante -
