Chili Rellano Casserole

This is a real easy dish that would go great as a side or as a main dish. Start by stabilizing the Egg indirect at 375 dome. The raws.

Start by spraying a little Pam in a 9 X 13 baking dish then spread out 2-7oz cans of diced green chilis evenly on the bottom of the dish.

Next layer in 2 lbs of shredded Mexican cheese or 1 lb of cheddar and 1 lb of Monterrey Jack.

Now whisk together 4 eggs with a 12 oz can of evaporated milk, 1 TBS of flour, and 1 tsp of salt. Pour the mixture evenly over the cheese.

Bake for 35-45 minutes until you get some browning on the top.


Garnish with lettuce, cabbage, tomatoes, sour cream, salsa, etc. Enjoy! -RP

Nice job, Randy! I did a similar one with roasted hatch chilis...just did layers of butterflied chilis, taco meat, and cheese...was way yummy.

I might even sprinkle a little pork butt on top of the chilies before adding the cheese, if I had some leftover.
