Tom & www.ceramicgrillstore.com is coming out with a new AR setup for the XL, or if you want to do it on the cheap, you can do something like this

I am waiting for an XL rig myself. In the meantime I use the stainless steel bolts similar to the picture above.
I've been in contact with Tom - he's very close to releasing the adjustable rig for the XL along with a larger diameter stone and larger oval grids. Mid December-ish was the release timeframe I heard, about 3 weeks ago. -
I have the one made by BGE. Good quality but I wish it gave me a little more height. I've managed to fit 8-9 lb packer briskets under it but just barely:

I have the flip 3 ring for my XL. Its good if you're cooking lots of ribs or direct with a lot of space between the grill and the lump.
As for fitting more butts or briskets by stacking, this becomes trickier. The dome is tall enough to handle larger pieces of meat on top. I have not tried this but it can be helped by substituting the platesetter with the spider ring and a pizza stone.
