  • gdube16,
i really like cedar plank salmon. .. .i do them as follows:[p]soak the planks for a good 3 - 4 hours. . .heat up the egg to 425 degrees dome temp, grid in the normal position. . [p]put the plank on the grid, wait about 5 minutes or so till it starts to 'crackle'. . .[p]i take my salmon, rub it with olive oil and dizzy pig raging river rub, or ken stones gilded splinters. . lay the salmon on the crackling cedar plank. ..after about 5 minutes, squeeze a 1/2 lemon over the salmon. . .pull after about 13 total minutes. . . most excellent. . .[p]a great simple sauce for salmon . . .take sour cream. . add lots (and i mean lots) of dill. .stir it up, serve it on the side. .. .

  • mad max beyond eggdome,[p]Thankds sounds good, I going to have to order me some of the dizzy pig. What would be a good substitute in the mean time.

  • gdube16,
gee, i don't know. ..any mild rub you might have. . .or just a little salt and pepper sprinkled on the fish, then brush it the last 5 minutes with a mixture of butter and maple syrup. ..maybe look at dizzypig recip's section to see what chris brushes his with, but i think its just the maple syrup and butter. . . .quite frankly, it will still be excellent with nothing but some olive oil and lemon juice on it. . .. [p]better give him a call and place an order. . ..if you've never tried his stuff, ask for the sample pack. . .
