Sorry to "beat the dead turkey" - I did a search and didn't find what I was looking for.
I will be doing a Mad Max turkey. Do I start the process with the bird at out-of-frige temp or room temp? And *gasp* I will be using a frozen bird. :ermm:

i do mine with it right out of the fridge, most important part is putting a bag of ice on the breast before cooking, about 20 - 30 min prior.

Stacie take a deep breath...it will be okay...
step 1
defrost turkey...this takes a few days in the fridge
step 2
remove bag of goodies inside the turkey
step 3
remove turkey from fridge & prepare ala Mad Max recipe which includes putting a bag of ice across the breast
step 4
get BGE ready
step 5
put turkey in the BGE & cook
You know the rest...Have a Happy Thanksgiving and remember Max will open his Turkey hotline so you can call and ask questions or just say hello & Thanks...
