Sorry to "beat the dead turkey" - I did a search and didn't find what I was looking for.

I will be doing a Mad Max turkey. Do I start the process with the bird at out-of-frige temp or room temp? And *gasp* I will be using a frozen bird. :ermm: :whistle:
