I've burned nearly all of my vacation time trying to get orders out for Christmas, and... since I'm alone tonight, ....I figure I owe it to myself to gorge myself on some cow. so. . ..how was a prociutto wrapped steak?? . . .while i put it in flank steak rolls, i'd never thought to wrap a filet in it. ..how was it??. .

CWM:[p]I saw your post regarding injecting garlic butter just as I was about to season filets for the evening cook. I injected prior to placing in the grill. I must say, they were great!

well, you have to remember, unlike bacon, the prociutto is already 'cooked' or really, cured. . .i do like the way it crisps up when wrapped around somehting like an abt though. . . .i was wondering how it would stand up to a high temp sear. . .glad it worked out and imparted some flavor to the meat. ..
