Watermelon Rind pickles help

O.K. Eggheads,
I'm trying to empty my fridge and have a jar of AZ. CO. watermelon rind pickles. I have never had en. Did some research but need help.

Wrap in bacon and cook till bacon is done, temp.??? rised grid??? O.K. to add anything hot or sweet, pineapple head... Inject with Capt. Morgans spiced rum??? :woohoo:

Help needed so I can unplug the damn electric eater. LOL

Ping Spring Chicken.He has done em.I have too.I nuke the bacon for 2 mins,wrap em and cook indirect 350 dome til the bacon is crisp.Soakin in rum could NOT hurt.Any rub/spice you like will be fine.You really cannot mess em up.

Like Hoss said, nuke the bacon to speed up cooking time. I don't put any additonal spice on mine. I like em right off the grill so that the bacon doesn't soften again from the rind. You are gonna love em. I make my own pickles so they are not sooo sweet. HTH brother. Great to see you on. Call me if you have any more questions.
