I've been searching for this for years. Now on the forum I wonder if any of you have a source for caul fat.

try a local meat packer.., i am on the otherside of the state. leidy's sells it but only by the case

yep , only reason i have not posted with it is it comes in 15 lb cases, and i have no idea what to do with that much...... got me thinking though ..

I am looking for a mail order source. The local smoker and packer here are clueless. Caul fat is very thin lace like sheet of fat. It is used to wrap rolled meats and also line terrine molds. It helps to keep shape and melts into the meat to keep it moist. Anne Burrell used it today making turkey rouladen and I've been wanting to use it for a long time. Do you want to share a case? Now that the weather is getting cooler it can probably be shipped with a couple of blue ice blocks. What is the address of your packer?

WOW. You found the impossible. Thank you! Did you see their web site? Korobuta pork cheeks. The Wagyu of pork. I'd have to break the bank to get them, and it doesn't say the weight. Just what I've been looking for, a mail order source for caul. I may get two orders to meet the free shipping. I can do that.

OK, let's compare prices. Reliablebrothers wants $80 for 20 pounds, no shipping charge over $50 order. Can you figure out what it will cost you to ship a case. I can easily use ten or fifteen pounds. Or I can share a case with you or Eenie. Great.

I saw Anne Bouril today do the turkey rouladen. I've also seen Julia Child line a terrine mold. And a few other things thru the years. Here are loads of pics.

Simply it's pork fat what is wrapped around the organs. Thin and lacey. Will hold the shape of things and keep it moist. It melts and disappears when cooked. Neutral flavor. -

Patty, I would be interested in sharing the caul with you. My grocers used it routinely to wrap around roasts, such as, porchetta. About a year ago they stopped. They said they could order it for me, that their source came from Canada. I don't the cost or if their is a minimium. I'll find out next week.
P.S. I stopped by Jungle Jim's last night.

MIGHT have found a (semi)local source for caul fat in Fombell, PA. That is, if it's the same thing as what this packer calls web fat?? Sounds like it just might be the real McCoy. I ordered a few pounds just to see what it is before I stock up. And, it may not cost a thing. I'll let you know. Can't find "web fat" on Google so it may be just their description. If it's indeed caul fat, I'll ask if they ship.
