Who needs a mini?

Well, I still want one, don't get me wrong. But realized when making dinner a couple of times this week that I don't "need" one. I cook for 2 most of the time and firing up the large for a steak or chops seems excessive. But since I have been using a smaller cooking grid and dropping it down on the coals, I don't need much lump at all to get a good sear. And bringing the temp back down for roasting takes less time too. Here are a couple of examples:
Bone-in pork chops, brined a'la thirdeye for 2 hours, rubbed with salt free Raging River.

On the fire to sear.

Done! My thermapen is on the blink and I left them on too long to roast and they were over cooked for our taste. Good flavor though.

Last night NY strip. Divided in 1/2, mine w/Richard Fl's Kona Koast Koffee rub his w/Montreal.

Another good sear.

Perfect!

Teresa, all looks yummy! I have a mini - never use it now that I have a small (which I love for just the two of us) honestly I hardly fire up the large now unless I'm doing a big cook or have company.

Teresa I love my mini.......Aproximate use: XL - 10%; L - 60%; Mini - 30%. Now, that 30% is just pure family quality time, when I'm not entertaining.....
I think I still have the same coals from last year on the mini..... :P

You do not have to have one, they are just fun/handy/neat,etc....
I use my mini more than my large or small.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given another Mini to add to the herd.
