Mumbo Jumbo Gumbo

Was looking in the freezer for something else and the mixings for gumbo got found. Turkey, Ham, Sausage, Homemade Veal and Chicken Stock.Must be the cool weather patterns.
Started off sauteeing the veggies in a 9 qt DO.

Some Sausage and Ham


Next the veal and chicken stock.

The roux was made in a separate ci pan and add at this point.
Added some okra and fresh tomatoes

Placed on BGE, direct spider up and it has been at 350F for the last 2 hours. Added some Rotel Original and a few cans of chopped green chilies.

Took some and mixed with rice. No pics. Have shut down BGE and will leave overnight to simmer and cool down. Used carambola wood for this meal, soft like apple.

It is a tropical thing. I like to thinly slice the ripe fruit and place in freeze. the slices make a nice presentation for a salad and are edible.

Richard: No disrespect, but are you leaving the Gumbo in the egg overnight to? Just concerns me a bit. :blink:

YUP! The dome is around 300 at midnight and I just shut the whole thing down with the gumbo in there. Just got it out, just slightly warm and a great smokey flavor. I do this with chili also.
