Best Table Sealer

Just purchased my first egg along with locally made extra long table. The table is cedar with a very light finish. What is the best sealer type to use for both stain and protection from grease/elements, etc?

Marine Polyurethane spar varnish.
Min-wax makes a good one, available at most hardwares and Big Box stores, approx. $15/qt.
Three coats minimum
