Sprinter, thanks for posting the Calzone recipe. Calzone is my daughter's favorite and per her, your's is the best. All I did was substitute her favorite ingredients: pepperoni, black olive, mushroom. Surprised my sister-in-law (the baker in the family) when I told her I made the dough. A new lesson for me on dough making, can't just rip open the yeast packet. One good tear, poof a cloud and you got those little rascals all over the kitchen. I ran the heater in the house during the night, so I hought fore sure, I'd would wake up the next morning having to due battle with the kitchen yeast monster - something resembling that Blob thing in one of the Ghost Busters movies. So far the Blob is a no show, maybe he is planning a surprise attack. Thanks again,

Sandbagger, check the date on the package of the yeast, it must be used before expiration & i prefer at least 6 month to go. Also proof your yeast by putting it in a glass with 1/4 cup warm (85-110F) & allow it to dissolve with a tablespoon of flour- if it does not form bubbles within 10 min. it's dead.

Chef Arnoldi, thanks, to put the bubbles in terms I can relate to and therefore remember: the bubbles are they more like beer foam (the top) or more like the bubbles in the beer that are rising to the top.

The bubbles will look like the rising beer bubbles, but they also sometimes collect at the surface. Yeast makes very tiny burps, CO2 makes big adult size burps. If you want to supercharge the process, add a tiny pinch of sugar to the water and flour.[p]You will know dead yeast, it will just sit there and do absolutely nothing, much like most dead things.[p]HTH

Sandbagger,[p]Wow, tell your daughter that her comments made my day.[p]I made those on the egg one day just as a test and was pretty impressed with the results myself. They are a staple at our household. My son and daughter love them also, I let them pack "their" calzones with whatever they want, then I cook one for the wife and I also. They get a big kick out of it and it involves them both in the cooking process a bit which is nice.[p]Thanks again. I appreciate the kind words of both you and your daughter.[p]Troy
