Alyce/Mr Toad[p] [p]I experienced your awesome apples at the EggtoberFest 2004 festival in Atlanta so I decided to bake some on the Egg for all my family over Thanksgiving.[p] [p]I followed the recipe on the forum but they were not even close to as good as what you fixed at Eggtoberfest. [p] [p]I’m not sure whether it was the Rum I used (we’re non-drinkers) or whether I didn’t burn all the alcohol off or what???[p] [p]I waited till the very end to pour in the Rum (Barcardi dark) and then I lit it once I poured it in the cast iron pot. I’m wondering if I should have lit the Rum in a saucepan in the house to be sure all the alcohol burned off before pouring it into the apples on the Egg?? The Rum almost overpowered the apples.[p] [p]Also, the apples turned real dark vs. the beautiful golden brown yours were at Eggtoberfest. I don’t know whether this was due to the cast iron pot I used or whether I should have used light Rum instead?? Also the walnuts turned real dark too even they were only in the recipe for the last 15 minutes.[p] [p]Might I need to cut down from the 2 cups of Rum to something less?[p] [p] [p]Any suggestions you can share would be much appreciated. I’d like to try them again for Christmas but want them to turn out like yours did so they’ll be the hit of the party.[p] [p] [p]

  • Avalanche,I was planning to do this for the first time pretty soon, also. My notes did not show burning off the alcohol. Also, Rodney mentioned using white wine as an option rather than dark rum. I wonder if the burning alcohol or dark rum maybe gave you a darker color ?? I hope he chimes in here...it sure was good
