how long
got an 11.5# butt how long do you figure??? was thinking of an overnite starting about 8 pm thurs. for dinner friday.

goldencoop, I would start about 4 to be on the safe side. You can take it off and wrap it in foil and towels then put it in a cooler till 12. It might not be ready by 12 if you start it at 8. Just my thinkin.

goldencoop, what temp are you using? If you're down at 220 it might take 24 hours but if you keep it at 240-250 or so I bet it will be done in 16-18 hours.
