Steaks directly on coals

It was suggested earlier that steaks could be seared direct on the coals. If so, is the same timing used as for a very hot grill? Ans what about the dwell, is the grill put back in for the dwell?

    I think last time I did it, I put the meat on the coals for 2 minutes per side, then added the grid back in for the roast. I don't know if it will help (because he did flank steak for fajitas) but you might check out Alton Brown's show "Raising The Steaks" on www.foodtv.com to see if his recipe says anything about how long he did it. I think he did it 60 seconds per side, but of course, it was relatively thin meat.[p]TNW

    I just check my AB archive and yes, he does the skirt steak 60 seconds per side, and that's all. Obviously, for thick steaks, you'd need to sear longer and then roast.

    Yes, I just read his skirt steak recipe. I don't know if my wife and daughter would laugh or scream at me, if they saw me using their blow dryer on the coals. Sounds a bit risky in this household - they might baker act me.
