Pork Shoulder-cooking small 3.5 lb. butt, at 230 degrees how long should I cook?

    Cook at 250 not 230 for 1-1.5 hrs per pound to 195 internal.

    I do mine at 250 and it takes about 1.5 hours a pound. about 5 hours give or take. Go to 195 internal temp. Then let it rest in a cooler for an hour or so. Wrap it in foil and then a towel before putting in cooler. I have had some rest for four hours that way when they finished early. They were still over 160 internal and were great.
  • The biggest fallacy newbees make is cooking by time. Always cook by temperature and you won't go wrong.

    Til it hits 195-200 internal.USUALLY around 1.5 hrs per pound.A little one may cook quicker.

    barbq, Welcome to the forum. I'm like everyone else here 250F dome temperature and leave in until internal temp reaches 195-205F. I often times double wrap in heavy duty aluminum foil and a towel in a cooler for about 20 min's or so. Tim :)

    Let me ask you one question. Have you checked the calibration of your dome thermometer?

    Even a new BGE thermometer can be off. Simply get some water boiling and put the tip in the boiling water. I usually put the clip on the pot and insert the thermometer in the holes keeping the tip off the bottom of the pot. Everyone knows water boils at around 212F depending on your location and barometric pressure. I just check it using a 7/16 wrench and double check again. Then you should be good to go.

    Thanks! No, I haven't checked the temperature but I will. It is four hours now and not quite done. I have had my egg since January and everything has turned out great, but I was not sure about my roast being smaller than usual. I used to have Kamados and love them back in the day. Thanks again!

    If you had your egg sense January you would know it by now if you thermometer was off bad. Tim ;)
