A good vegetable medley

So I am looking for a good vegetable medley to do up on the egg. Something healthy (not too much butter and stuff like that). I'm not big on asparagus or mushrooms. Any suggestions?

    Eddie, a giant veggie medley is great on the egg. They cook so fast, if you slice them all in advance & cook over a very hot flame, you can bang a ton of different stuff on & off pretty quickly. Here is a sample, but you can substitute any veggies under the sun to suit your taste, dunk in olive oil then season to taste & a a quick hit on the egg:

    of course there is some bacon there in the middle on the abt's, gotta have some meat right :laugh:

    that looks great!

    we routinely do them in a wok shaped basket

    a combination of mushrooms, onions, peppers (different colours), zuchinn(yellow, green), carrots, asparagus, even added some okra last week to mix it up.

    usally tossed in balsamic vinegar, then shake on some rub before they go on
    context is important :)

    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

    I roasted up some veggies from the Farmer's Market on Saturday night. It was a nice fall blend, baby turnips, purple carrots, whole peeled shallots and sweet potatoes. Mixed with fresh thyme and olive oil. Roasted in the egg at 375 for about 45 minutes in the glass pan. They were delish! No finished pic, sorry.
