I cooked 12 Wings this evening in the mini.
Just wondering, how this 12 fits in the mini, I had the idea of a wing rack
Poke the wings between the grid crossbars
here it is:

seasoned with Jamican Firewalk, and added to the mini with the Mini Woo and the stone.

came out ok, but I love it more crisp. But after adding the fullfilled grid / rack to the mini, the temp was hard to get over 250 F. Next time I´ll add more lump, to reach higher temps.

In the mini I go raised like you but do direct at 350/400 and works fine.
Also I leave them uncovered in fridge overnight - think that also helps on skin.
You can do a nice spatchcocked chicken on that mini raised like you have it.
Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given another Mini to add to the herd. -
With 2 racks in the mini you can really get a lot of wings in it.

Very nice cook.
The more food you jam into any cooker the harder it is for you to get crispy skin. The Egg holds moisture so well even with higher heat it will steam the food.
You can put the wings in the fridge over night uncovered to dry the skin or try the corn starch dusting.
Still, your wings look very good. I put 6 on my mini and still had trouble getting the crisp skin.Thank you,DarianGalveston Texas -
Wings look delicious... y'all make this mini look better and better!Large and Small BGE * www.quelfood.com
