would you cut a small pork tenderloin in half to achieve two levels of doneness? i like mine cooked "properly" and my wife likes me to "kill it".
thoughts and suggestions recommended.
thanks in advance.

Jason,
Define properly. Is there enough room to serve her the thin ends and the thick center pieces for yourself? No harm in cutting it but I would cut the thickest part for yourself and do the thin for your wife. I smash the thin ones down in the direction of the tender. My wife often gets those wrapped in bacon and cooked as crisp as the bacon

Maybe just give her the smaller end.....and try to cook her end over a hotter part of the fire....just an idea..

I've done that before....no problem! In fact, I usually buy the pork tenderloin in pieces ('cause it's cheaper) for my demo cooks!
-
usually the smaller end works just fine, but this one (at least in the package) seems to be the same thickness throughout.
this is what i consider properly....
cheers! -
There's nothing to use for size comparison in the pic..but that looks more like a loin than a tenderloin..
-
if you want to overcook pork, you might as well use the nuke to finish it up :laugh:fukahwee maineyou can lead a fish to water but you can not make him drink it

That's what I usually do with my wife's, i like some pink with flavor and juice, she likes in well done. A minute in the microwave solves the issue.XL Walled Lake, MI

If that is the same oversized cutting board I use I would say the same. Shape is more like a loin. Maybe he showed it for the colour.

Good point Steve..

I often cut them into medallions which can then be grilled as either savory, tasty, tender mini-chops, or "killed" to the hockey puck stage depending on one's taste.

You guys are correct. That is a loin. I still can't get cut names right. Sorry.
It's the pre-packaged hormel thingys.
i usually do nuke hers, but slicing one and doing it to mid-well on the egg crossed my mind today. she doesn't mind if i kill it in the microwave, but all the juices seem to run out when i do it that way.
thanks again guys!
