Aluminum or Tin Bread pans and such

Morning all,

Starting to do some research for the Throwdown. I only have a CI DO and Skillet. Does using Alum or Tin
muffin tins, bread pans et al, change how the food cooks? Any issues I need to be aware of using this stuff?

    make sure to raise the pan off the stone or the bottoms may burn quicker. if your following oven directions i go a littler hotter than the directions call for

    Hi Roger, back when I was cooking a lot I used non-stick aluminum for baking bread and it was great. I do have a huge Pyrex loaf pan but have only used it for meat loaf. If you have access to the original Pyrex, made in Corning, NY, it is probably just as good as anything else, maybe better. Corning sold the rights to the Pyrex name in 1998 and it is no longer made from the same glass. There is still good vintage Pyrex to be found in thrift stores for a good price.
