Canadian BackBacon Ideas

I have a 3lb chunk of Canadian Back Bacon, (pork loin with Cornmeal) would normally cook it at 250 indirect until it reaches 165 didnt know if there was any other ideas out there

I would not smoke past 137-140* internal....safe to eat at that point right off the egg! I sure wouldn't take it any higher. There will be enough moistness left, and a quick visit to the morning fry pan, you'll be a happy family!

I just did a 4 lb. up here in Ottawa last night. I go direct at 325 until 160 internal. You'll have to toss it around a bit but it puts a nice toasted crust on the cornmeal. Also takes about 1 hour. Slice and serve. On a bun with cheeze is always a hit. With snow falling and beer in hand...(ya it was snowing here last night

but i might smoke it too, like you suggest, to warm it up. was kinda hoping steven would chime in with the definitive canadian way to eat the stuff though.ed egli avea del cul fatto trombetta -Dante -
We fry it typically. Its good roasted too. Great burger topping. You can stew it but very salty.
