Need advice smoking oysters WITHOUT shells
I apologize if this topic has been covered before. I saw a few posts in the archives, but still wanted more opinions.[p]I have about a pint of oysters and alderwood to smoke with, but don't have the shells.[p]Will aluminum foil work? If so do I need to make individual "shells" for each oyster or can I put them all in 1 big package? Would I want to poke small holes in the bottom of said package?[p]What temp? How long?[p]Sorry for so many questions. Thanks for the help!!![p]~Chip

sellinrain,[p]Yes, you can make a flat tray of heavy duty aluminum foil, doubled up, or cover a pie plate or tray with foil to protect it from the smoke. Put the oysters in a single layer in the tray - do not cover them up. Smoke at about 225 for maybe 20 minutes or so - they don't take long. [p]Lee
