Woke up brisket cooking too hot, what to do?

So I cooked a brisket following Bubba Tims recipe. Injected let marinate for 8 or so hours then put on the grill at 215.
Woke up 6 hours later and the grill was at 290, not sure what happened I had let the grill stabilize at 215 with plate setter drip pan and everything for 45 mins before putting it on.
Should I pull it off and foil it?
Current meat temp is 170 after 8 hours.

  • Get the temp stable at around 225 for the rest of the cook and you should be fine. 170 is around the time that the temp plateaus while the connective tissues are breaking down. You should have several more hours at 225 cook temp before the meat reaches 190, which is about where you want to be.

    There is no harm done. Lower your dome temperature if you want, the brisket will cook at 190° just fine if you like.

    Watch the bark and if it seems to be getting too over cooked you can get a piece of aluminum foil and loosely tent over the top of the brisket.

    Cook your brisket unitil it is tender with the fork test. Use a probe, tooth pick or something like an ice pick, to feel the tenderness. The probe should go into the meat easily and when pulling out should have no pull. I sometimes will get an easy insert but a 'pull' when removing the probe. I then cook a little longer. For me this ease of pulling happens somewhere between 190° - 200° usually closer to the 200° mark.

    Good cooking, sounds like you are going the have a nice Sunday meal.

  • Thanks for all the help, this is my first brisket but I hope it will turn out good, well it better be considering I have 10 pounds to eat between 2 people.
    Any idea what could have caused the spike in temp? I thought it was stablizied when I went to sleep, hadnt moved in at least at hour.

    If and a bit IF the egg was actually stable and the vents were not changed or moved and the dome was not open the temperature should not have changed what so ever.

    Guessing, you didn't have the egg actually stable, that is the ceramics were possibly not to temperature.

    Once you get to know your vent settings you will set the egg and it will clime to or very close to the settings you use.
