I am smoking chicken tommorrow for my wife's party at my house and I need a recipe for this if I can get it. I had it once in Huntsville, Alabama and it was great on chicken... nice white sauce...

    1/4 cup cider or white vinegar
    1/2 tsp prepared horseradish
    1/2 tsp salt
    1/2 tsp black pepper
    1/8 tsp cayenne pepper
    1/2 tsp lemon juice

  • bama boy,[p]Sounds interesting but I have a question. Is the white sauce added near the end of the cook much like regular BBQ sauce or is it put on the side of the plate as a dipping sauce?[p]Marty

    LAD,[p]I had the chance to eat a Big Bob Gibson's last christmas in alabama. You can go to www.bigbobgibsons.com to check out their site. Anyway, they have their recipe their for their chicken and they fully cook the chicken, then completely submerge it at the end. It doesn't go back on the grill at that point. They recommend a 4-5 minute rest so the sauce can set in.[p]Its great stuff!

    Don't use it for basting while cooking. It's for dipping and as fiver29 stated, Big Bob Gibson submerges whole chicken quarters/halves in the sauce before serving.[p]To get a smooth consistency, use a wisk or fork and slowly blend the vingar into the mayo until you get it to your desired thickness.[p]It's a really quick and simple recipe that allows for easy experimenting with different spice ingredients. Try rice wine vinegar for a smoother taste without the bite.
  • fiver29,[p]I've had White BBQ Sauce on the brain since I read the earlier post this morning while drinking coffee. I spent some time this afternoon trolling the bowels of the Internet and came across this recipe for Big Bob Gibson's White Sauce mentioned earlier. I'm going to forgo the spatchcock chicken tonight since tonight is an experiment. Instead, I bought four chicken breast. Normally I prepare one side of the spatchcock chicken with BBQ sauce and the other side plain since our daughter doesn't like BBQ sauce. Tonight will be 1-Plain Breast 1-Regular Breast w/ Normal BBQ sauce and 2-White Breast. <---Wish me luck. [p]Marty

    LAD,[p]Good luck! Thanks for the link. I printed it off just a minute ago.[p]I'll have to try both to see how they compare to the bob... hehe.. I ate there a year ago and brought home some white sauce. Real good stuff. Now I have to try to make my own and see how it compares.[p]Thanks again, John
